Ingredients

• • 2 Cups Frozen Corn Kernels
  • 1 CÁn BlÁck BeÁns drÁined Ánd rinsed
  • 1/2 red bell pepper chopped
  • 1 bunch green onions sliced or 1/2 red onion diced
  • 1/4 Cup MÁyonnÁise
  • 1/4 Cup Sour CreÁm
  • Lime zest from one lime
  • Lime juice from one lime
  • 1 TÁblespoon minced jÁlÁpeno.
  • SÁlt Ánd Pepper to tÁste

Instructions

• Place corn through green onions in a large bowl.
• In a separate bowl, mix mayonnaise, sour cream, lime zest, lime juice and jalapeno.
• Add salt and pepper to taste.
• Mix dressing into salad bowl.
• Stir gently.
• Serve immediately or chill until ready to serve.

• Can add additional jalapeno if you like it spicier!
